The perfect vegan autumn recipe. This is a fantastic and wholesome dish for the whole family: it’s rich in flavour, yet full of nutrition and also high in protein. I am using the jackfruit for flavour and the quinoa for nutrition and this combination makes the perfect dish for the colder months. And because you don’t always have time to spend lots of time in the kitchen or pulling jackfruits, I decided to just bake the whole thing so preparations only take about 10 minutes before you let your oven do the rest!
