First thing is that you’ve got this…..this is NEVERFAIL….and you are already a baking ninja anyway.
But you may still be wondering, why would I even want to start making Vanilla extract?
Well, here are just SOME of the reasons:
✅ Slow Cold extracted vanilla extract is simply delicious – better than store bought which is done fast in a factory often using heat – and the longer you keep your extract the better it gets! You can even keep it for years – it keeps on getting better!
✅ It takes less than 10 minutes to make
✅ You can give it away as presents to friends.
✅ It’s more economical than store bought
✅ You know what ingredients went in to it
✅ It’s more environmentally friendly and sustainable as you are recycling the same glass bottle rather than shipping lots of small heavy bottles with a big carbon footprint.
Okay, so that’s enough of the WHY let’s get into the HOW. Super Easy!!
To make 1/2 cup of your own vanilla extract (125ml) you need 1/2 cup of alcohol (125 ml) 35%-45% proof.
A neutral flavored vodka is the usual choice (Note:the cheaper vodka’s are better for this reason!). But you can experiment with Rum, Sherry etc. Importantly though the aromatic vanilla compounds you want are only soluble in alcohol between 35-45% proof.
AND 3 vanilla pods PLUS a little (6 to 12 weeks) waiting time.
If you double the number of beans you can cut the time in half or use less beans and wait longer!!
Finally The Process (could not be simpler!)
Step 1 : Slit the Vanilla Beans lengthwise with a sharp knife
Step 2: Pop them in a bottle or other glass container that can be sealed
Step 3: Cover the beans with the required amount of alcohol (ensure the beans are fully submerged
Step 4: Wait between 6-12 weeks for the best vanilla extract you have ever HAD!!! or it will keep getting better for many years!!
Step 5 (optional): You can add a little sugar to the extract to taste – but this is totally optional and entirely up to you!
